Chili for a cold day
I know. I live in Florida so once in a while the temperature drops below 75° instead of the usual 100° weather. When that miracle happens is a great opportunity to make something warm, savory and just plain yummy. I’m talking about chili yes chili. What you need to keep in mind is that chili takes a while to make, so unless you have one of the latest Martha Stewart magical instant pot, clear your calendar for the next four to five hours. Or, if you have a slow cooker you can prepare all the items the night before, set it up in the morning, and by the time you come back home from work, running after the kids, running an ultra or whatever else your heart desires, you have heartwarming chili. You can make it as spicy as you want with the additional jalapeños but for this recipe, and since I am more of spice rather than hot spicy kinda girl, I will leave the jalapeños for the daring few.
Ingredients:
1 Yellow chopped Onion
1 cup of shredded carrots
1.5 cups of chopped peppers (green, red, yellow)
2 Tablespoons garlic paste
l/2 a cup of dry lentil
6 oz of kidney beans
1 can of diced tomatoes
1 can of crushed tomatoes
2 tablespoons of chili powder
½ tablespoon of paprika
salt to taste (I add 1-2 tablespoons but I like my food salty)
- The night before: set the kidney beans in a pot with water and some baking soda. This will help to make them softer and take some of the added benefits eating beans have to offer. If this slipped your mind – no worries heat the beans in water and baking soda for at least an hour before you start cooking.
- In a heavy pot over medium-high heat sauté the vegetables (onion, carrots, peppers).
- Add the rest of the ingredients and spices and bring to boil.
- Lower the heat to low, cover and let it simmer for at least 2-2.5 hours until the beans are soft. Stir occasionally.

I added Jalapenos because I like the extra spice. Easy to make and simply delicious.
